Recipes for sweet tooth:Apple pie, nuts and poppy seeds


Ingredients
2 slices of pie dough for two crusts (see below)
1 1 / 2 cups (375 ml) half-walnuts
1 cup (250 ml) (155 g) of poppy seeds
1 / 3 cup (75 mL) granulated sugar
1 / 3 cup (75 ml) brown sugar
1 / 4 cup (60 mL) all-purpose flour
1 / 2 c. tsp (2 mL) cinnamon
1 / 4 c. tsp (1 ml) nutmeg
1 pinch of ground cloves
1 pinch of salt
1 / 2 cup (125 mL) currants
2 c. tablespoons (30 ml) brandy, cider or apple juice
6 cups (1.5 L) apples, peeled, thinly sliced
2 c. tablespoons (30 ml) melted butter
2 c. tsp (10 mL) grated lemon rind
1 c. tablespoon (15 ml) lemon juice
1 c. tablespoon (15 ml) cream or milk
2 c. Tea (10 ml) of raw sugar, brown or white
Slightly sweetened whipped cream
Preparation
1. Place the largest slice of dough on a lightly floured surface and lower it to cover a deep pie plate from September to October in (23-25 ​​cm), leaving more than a band of 2.5 cm (1 inch) around .
2. Roast the nuts in a dry skillet over medium-low heat until fragrant them, let them cool. Put poppy seeds in spice grinder and grind them coarsely. Transfer them in a large bowl, add sugar, flour, cinnamon, nutmeg, cloves and salt and mix well. Chop nuts cooled by removing the skins which are detached, add them to the mixture.
3. In a bowl that can go in the microwave, mix the raisins and brandy, warmed to 30 seconds at maximum power. Let them cool, add them to the bowl along with the apples, butter, zest and lemon juice. Mix well.
4. Lower the second disc of dough to cover the pie. Pour the filling into the dish and cover with second crust. Straighten and flute the edges. Practice 3 or 4 slits in the pastry to allow steam to escape. Brush the surface of cream and sprinkle with raw sugar.
5. Bake the tart in the bottom of the oven to 425 ° F (220 ° C) for 15 minutes, lower the temperature to 350 ° F (180 ° C) and cook 40 to 50 minutes, until pastry is golden and filling is bubbly. If the dough is golden brown but the filling does not bubble, cover loosely with aluminum foil and continue cooking. Serve accompanied with whipped cream pie to taste.
